can i use a regular 5 -7 or 12 gallon compressor...?

to take on the road to refinish tubs with a hvlp gun? they say you need nothing less than a 20 gal. compressor for hvlp use . is this true , because when you spray tubs , its not like you need a half hour worth of constant air pressure. its on and off, and dosent a regulator regulate that pressure so you dont go go below a certain psi???? anyone know, maybe a good woodworker/finisher?? help
